Introduction to
Histamine Sensitivity

Understand the bigger picture beyond food lists and isolated triggers.

A clear, approachable course for clients, Rojas Colon Hydrotherapists and gut health practitioners who want to understand what histamine is, why the body needs it, and what may happen when histamine load begins to exceed the body’s capacity to process it.

Welcome to the course

Make the complex world of histamine easier to understand

Histamine is often associated with allergies and reactions, but its role in the human body extends far beyond this. It is involved in immune function, digestion, stomach acid production, nervous system signalling, wakefulness and many other physiological processes.

The goal is not to eliminate histamine. It is to understand the balance between production, exposure, release, metabolism and clearance — and what may happen when histamine begins accumulating faster than the body can process it.

Designed for curious learners and practitioners

Who This Course Is For

For clients

Understand your own body

Explore what your body may be communicating without creating unnecessary fear around histamine or food.

For gut health practitioners

Deepen your knowledge

Build a clearer picture of histamine sources, gut and microbial factors, metabolism, tolerance and referral considerations.

YOUR TOTAL
HISTAMINE LOAD

Load can change from one day to another.

A useful way to see the full picture

Understand the Histamine Bucket

Histamine sensitivity is rarely explained by one food or one isolated trigger. The histamine bucket helps show how multiple inputs may contribute to a person’s total histamine load.

  • Food-derived histamine
  • Microbial activity
  • Mast cell activation
  • Gut health
  • Hormones
  • Stress
  • Immune activity
  • Medications
  • Alcohol

A grounded introduction to the bigger picture

What You Will Explore

Move from “What food caused this?” toward a broader understanding of production, exposure, release and clearance.

01

What histamine is

Why the body needs histamine and the many physiological processes it supports.

02

Where it comes from

Histamine produced within the body and generated through bacteria, fermentation, food storage and other sources.

03

The gut connection

How gut health, the microbiome and microbial activity may influence total histamine load.

04

Release and triggers

How mast cells, immune activity, stress, hormones, alcohol, medications and other factors may contribute.

05

DAO and HNMT

The important roles of diamine oxidase and histamine N-methyltransferase in histamine metabolism.

06

Changing tolerance

Why an individual’s tolerance may vary and why the same food may not create the same response every day.

Most importantly

Look Beyond the Plate

Rather than reducing histamine sensitivity to an increasingly restrictive list of foods, this course explores the bigger physiological picture.

Where is histamine coming from? What may be stimulating its release? What is happening in the gut and microbiome? How effectively is it being metabolised?

This approach supports greater understanding without turning histamine — or food — into the enemy.

Do I need prior knowledge?

No. The course begins with the fundamentals and explains histamine sensitivity in an approachable way. Practitioners can also use it to strengthen and organise their existing knowledge.

Is this a low-histamine diet plan?

No. Food is included, but the course deliberately looks beyond restrictive food lists to explore histamine production, exposure, release, gut and microbial factors, metabolism and changing tolerance.

What is included?

The curriculum includes video lessons, a full presentation, 31 pages of presentation slides, a 51-page e-book, a food-navigation lesson and additional learning on MCAS, POTS and histamine intolerance.

Is this medical training or personal medical advice?

No. It is an educational short course and does not provide diagnosis, treatment or personalised health advice. Individual concerns should be discussed with an appropriately qualified healthcare professional.

How much does the course cost?

Standard enrolment is A$60 AUD. Past students of our Rojas Colon Hydrotherapy Foundation Course can purchase the course for A$40 AUD.
